Prepare the Walleye
Rinse the walleye fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

Prepare the Breading Station
Set up three shallow dishes: one with flour, one with beaten egg mixed with milk, and one with cornmeal. This will be used to bread the fish.

Fry the Fillets
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully place the breaded walleye fillets in the skillet. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Slice the hoagie rolls lengthwise. Place two lettuce leaves on the bottom half of each roll, followed by a slice of tomato. Add the fried walleye fillet on top and generously drizzle with tartar sauce. Place the top half of the roll over the fish.
