Walleye Preparation

Make the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer or sparkling water until the batter is smooth and thick.

Heat Oil
In a large skillet or deep fryer, heat the oil over medium-high heat until hot (about 350°F/175°C).

Coat and Fry Walleye
Dip each walleye fillet into the batter, allowing excess to drip off, and carefully place in the hot oil. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
Tartar Sauce Preparation

Mix Ingredients
In a small bowl, combine mayonnaise, dill pickles, capers, lemon juice, and fresh dill. Season with salt and black pepper to taste. Mix well and refrigerate until serving.

Toast
Place the bread under the broiler for about 2-3 minutes until golden brown and crispy.

Fry Potatoes
In the same oil used for frying walleye, carefully add the cut potatoes. Fry for about 4-6 minutes until golden brown and crispy. Remove and drain on paper towels. Season with salt to taste.
