Prepare the Onion Rings

Peel the large onions and slice them into 1/2-inch thick rings. Separate the rings and set them aside.

In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Whisk until well combined.

Gradually pour the cold sparkling water into the dry mixture, stirring gently until a smooth batter forms. Do not over-mix; it should be slightly lumpy.
Fry the Onion Rings

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature.

Dip each onion ring into the batter, allowing any excess to drip off before carefully placing it into the hot oil.
