Flatbread Preparation

Activate Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine all-purpose flour, salt, and olive oil. Gradually add the yeast mixture and mix until a dough forms.

Preheat Oven
While the dough is rising, preheat your oven to 475°F (245°C).

Roll Out Dough
Once the dough has doubled in size, punch it down and roll it out on a floured surface to your desired thickness (about 1/4 inch).

Prepare Tomatoes
Slice the fresh tomatoes into thin rounds and sprinkle with salt and pepper to taste.

Prepare Mozzarella
Tear or slice the fresh mozzarella cheese into bite-sized pieces.

Assemble Flatbread
Transfer the rolled-out flatbread to a baking sheet lined with parchment paper. Drizzle olive oil over the surface, then layer the sliced tomatoes and mozzarella evenly.

Bake
Place the flatbread in the preheated oven and bake for 12-15 minutes, or until the crust is golden and the cheese is melted.

Add Basil
Remove from oven and immediately top with fresh basil leaves. Drizzle with a little more olive oil if desired.
