Burger Preparation

Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes. Remove and place on paper towels to drain excess fat.

Form the Patties
In a mixing bowl, take the ground beef and form it into two equal patties, approximately 1/2 inch thick. Season with salt and pepper.

Cook the Patties
In the same skillet used for bacon, increase heat to medium-high. Cook the beef patties for about 4-5 minutes on each side, or until they reach your desired level of doneness.

Add Cheese
In the last minute of cooking, place a slice of smoked cheddar on each patty, cover with a lid to melt the cheese, and remove from heat.

Chipotle Mayo Preparation

Make the Chipotle Mayo
In a small bowl, combine mayonnaise, chipotle pepper, lime juice, garlic powder, and salt. Mix until well combined. Adjust seasoning to taste.
Assembly

Assemble the Burger
Spread a generous amount of chipotle mayo on the bottom half of each toasted bun. Layer with lettuce, followed by the beef patty with melted cheese, crispy bacon, and tomato slices. Top with the other half of the bun.
