Method
Preparing the Green Beans

Wash and Trim Green Beans
Rinse the fresh green beans under cold water and trim the ends off. Pat them dry with a paper towel.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the mixture is smooth.
Frying the Green Beans

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

Batter and Fry
Dip each green bean into the batter, allowing excess to drip off. Carefully place them in the hot oil in batches, taking care not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown.

Drain and Cool
Using a slotted spoon, remove the fried green beans from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with additional salt if desired.
Making the Sauces

Prepare Plum Sauce
In a small saucepan over medium heat, combine the plum preserves, soy sauce, rice vinegar, and minced garlic. Stir until the ingredients are well mixed and heated through. Remove from heat and let cool slightly.

Prepare Chipotle Ranch
In a small bowl, mix together the ranch dressing, minced chipotle pepper, and lime juice until well combined. Adjust seasoning if necessary.
