Preparing the Fish

Make the Batter
In a mixing bowl, combine the all-purpose flour, baking powder, salt, and pepper. Gradually whisk in the cold sparkling water until the batter is smooth and thick enough to coat the back of a spoon.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Fish
Dip each fish fillet into the batter, ensuring it is well coated.

Fry the Fish
Carefully place the battered fish fillets in the hot oil, ensuring not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown and cooked through. Use a slotted spoon to remove the fish and drain on paper towels.

Cut the Potatoes
Peel the potatoes and cut them into thick strips (about 1/2 inch wide).

Soak the Chips
Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In another pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips (Second Fry)
Increase the heat of the oil to 375°F (190°C). Fry the chips again in batches for 3-5 minutes until they are golden and crispy. Drain on paper towels and sprinkle with salt.
