Method
Preparing the Fish
Mix the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and thick.
Heat the Oil
In a large pot or deep fryer, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).
Coat and Fry the Fish
Dip each fish fillet into the batter, ensuring it is fully coated. Carefully place the battered fish into the hot oil and fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Preparing the Chips
Prepare the Potatoes
Peel the russet potatoes and cut them into thick fries (about 1/2 inch wide). Rinse them in cold water to remove excess starch, then pat them dry with paper towels.
Heat the Oil
In a separate pot or deep fryer, heat 4 cups of vegetable oil over medium-high heat until it reaches 325°F (163°C).
Fry the Chips
Add the cut potatoes to the hot oil in batches and fry for about 5-6 minutes until they are soft but not browned. Remove and drain on paper towels.
Double Fry the Chips
Increase the oil temperature to 375°F (190°C). Fry the chips again in batches for another 2-3 minutes until they are golden brown and crispy. Remove and drain on paper towels, then season with salt.
Serving
Plate the Dish
Serve the crispy fish alongside the golden chips on a plate. Offer malt vinegar, tartar sauce, and lemon wedges on the side for added flavor.
