Method

Prepare the flatbread dough

    Activate the yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Combine dry ingredients

    In a large mixing bowl, whisk together all-purpose flour and salt.

    Mix the dough

    Make a well in the center of the flour mixture and add the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead the dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let the dough rise

    Place the kneaded dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Cook the flatbread

    Preheat the oven

    Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.

    Shape the flatbread

    Once the dough has risen, punch it down and divide it into 2-4 equal portions, depending on the desired size of your flatbreads. Roll each portion into a flat circle about 1/4 inch thick.

    Brush with oil

    Brush each flatbread with olive oil on both sides.

    Bake the flatbread

    If using a pizza stone, carefully transfer the flatbreads onto it. If not, place them on a baking sheet. Bake for 8-10 minutes until golden and puffed.

Add toppings

    Add cheese and toppings

    Remove the flatbreads from the oven and sprinkle with shredded mozzarella cheese. Add fresh basil leaves, tomato slices, and red onion to your liking. Season with salt and pepper.

    Return to oven

    Return the flatbreads to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.

    Serve

    Remove from the oven, let cool slightly, slice, and serve warm.
