Brown Sugar Bacon
Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil for easy cleanup. In a bowl, mix brown sugar and black pepper. Coat each slice of bacon in the brown sugar mixture, then lay them flat on the baking sheet. Bake for 15-20 minutes, until crispy and caramelized. Keep an eye on them to avoid burning. Once done, remove from the oven and let them drain on paper towels.

Prepare the Sauce
In a saucepan over medium heat, combine bourbon, ketchup, brown sugar, Worcestershire sauce, garlic powder, onion powder, and salt. Stir well and bring to a simmer. Allow the sauce to cook for about 10-15 minutes, stirring occasionally, until it thickens slightly. Remove from heat and set aside.

Assemble the Sandwich
On the bottom half of each burger bun, place two slices of the brown sugar bacon, followed by a slice of smoked cheddar cheese. Drizzle a generous amount of bourbon sauce over the cheese. Top with the other half of the bun and gently press down. Repeat for all sandwiches.
