Prepare Glass & Syrup
Chill and measure
Place a tall glass in the refrigerator for a few minutes or fill it with ice to chill. Measure 2 tablespoons of simple syrup (or flavored syrup) and 1 teaspoon fresh citrus juice and set aside.
If you don't have ready simple syrup: combine equal parts granulated sugar and water (for example 1/2 cup sugar and 1/2 cup water) in a small saucepan, heat gently while stirring until sugar dissolves, cool before using.
Assemble Soda
Add ice to the chilled glass (about 1 cup of ice). Pour the measured 2 tablespoons of simple syrup over the ice.
Add the 1 teaspoon fresh citrus juice (or concentrated flavor) to the glass. If using bitters or vanilla, add 2 dashes now.
Slowly pour 2 cups of chilled carbonated water down the side of the glass to retain as much fizz as possible. Stir gently once with a long spoon or straw for about 5 seconds to combine syrup and flavor with the soda without flattening it.
Garnish & Serve
Garnish with a citrus wheel, wedge, or a sprig of fresh herb (mint). Taste and adjust sweetness or acidity: add another teaspoon of syrup if sweeter, or a squeeze more citrus if brighter.
Serve immediately with a straw. Enjoy your homemade soda while it's still fizzy.
