Chill glass

Place a highball or Collins glass in the freezer for 5–10 minutes, or fill it with ice and set aside while you build the drink to ensure it's nicely chilled.

Shake base

In a cocktail shaker, add 2 oz bourbon, 0.75 oz amaro, 0.5 oz fresh lemon juice, 0.5 oz simple syrup and a handful of ice. Secure the lid and shake vigorously for 10–12 seconds until the shaker is cold to the touch.

Prepare glass

If you pre-chilled the glass with ice, discard that ice now. Fill the highball/Collins glass about two-thirds full with fresh ice (about 1 cup).

Double strain

Double-strain the shaken mixture into the prepared glass over the fresh ice. Double-straining (using the shaker strainer and a fine mesh) removes tiny ice shards and citrus pulp for a cleaner sip.

Finish & Garnish

Top with ginger beer

Gently top the strained cocktail with 3 oz ginger beer. Pour slowly down the side of the glass to preserve carbonation and create a lightly layered look.

Bitters & stir

Add 2 dashes of Angostura bitters on top of the ginger beer. Give the drink one or two gentle short stirs with a bar spoon to fold the ginger beer together with the spirit base without flattening it.

Garnish and serve

Garnish with a lemon wheel or twist on the rim and optionally a piece of candied ginger or a fresh ginger slice skewered and laid across the top. Serve immediately.
