Prep glass

Chill a large rocks or Collins glass by filling it with ice and setting it aside while you mix the drink (optional).

Crush ice

If you don't have pre-crushed ice, place standard ice cubes in a clean towel or in a blender and crush until you have about 1 cup of crushed ice.

Mixing the Crush

Discard the ice used to chill the glass (if chilled). Fill the glass about two-thirds full with the crushed ice (reserve a little room for the floater).

In a cocktail shaker (or mixing glass) combine 2 oz light rum, 0.5 oz 151 proof rum, and 1 oz peach liqueur. Add the orange juice, cranberry juice, and pineapple juice (2 oz, 1.5 oz, and 1.5 oz respectively).

Add a small handful of crushed ice to the shaker (about 1/4 cup) to chill and dilute slightly. Cap the shaker and shake vigorously for 10–12 seconds until well chilled. If you prefer, stir briskly in a mixing glass for 8–10 seconds.

Strain the mixture into the prepared glass over the crushed ice, allowing the liquid to settle into the ice and creating a slushy, crushed texture.

Float & Garnish

Carefully pour the reserved 0.5 oz of 151 proof rum over the back of a spoon held just above the surface of the drink so it floats on top as a clear floater. This creates the signature 151 floater layer.

Garnish with an orange wheel or pineapple wedge and a maraschino cherry on a cocktail pick. Serve with a short straw and a cocktail stirrer so the drink can be mixed before sipping if desired.

Warn guests about the floater: advise caution when drinking or igniting (if planning a flaming presentation, do not attempt unless experienced and follow safety precautions).
