Toast bread (optional)
If you prefer a crisp sub, split the sub roll horizontally and toast cut sides under a broiler or in a toaster oven for 1–2 minutes until lightly golden. Remove and set aside.
Drain banana peppers if they are in brine. Measure out about 2 tablespoons.
Make Spread
In a small bowl combine mayonnaise, Dijon mustard, olive oil, lemon juice, salt, and black pepper. Whisk until smooth and taste; adjust salt or lemon to preference.
Assemble Sandwich
Open the toasted or untoasted roll and evenly spread the prepared mayo-Dijon mixture on both cut sides (about 1 tablespoon per side).
On the bottom half of the roll layer lettuce (about 1 cup loosely packed) to create a moisture barrier.
Place the sliced roasted turkey evenly over the lettuce (use all 6 oz). Slightly overlap slices to cover the length of the roll.
Lay the cooked bacon strips (3 pieces) over the turkey.
Add tomato slices (3 slices) and red onion rings (3 rings) on top of the bacon.
Distribute banana peppers (about 2 tablespoons) evenly across the tomato layer for brightness and mild heat.
Add optional pickles or a dash of hot sauce if using.
Close the sandwich by placing the top half of the roll over the fillings. Press gently to compress the sandwich slightly.
If desired, cut the sandwich in half on the diagonal using a sharp knife and secure with toothpicks for serving.
Serve
Serve immediately while bacon is warm and the bread is crisp. Accompany with chips, a side salad, or extra banana peppers on the side.
