Tuna
Prepare tuna
Pat the ahi tuna dry with paper towels. Cut the tuna into bite-sized cubes, about 1-inch pieces (yields roughly 24–30 bites from 1 lb). Place cubes in a bowl and toss with 1 tablespoon olive oil, 1 teaspoon kosher salt, and 1/2 teaspoon freshly ground black pepper to evenly coat.
Blackening Spice
Make spice blend
In a small bowl combine smoked paprika, ground cumin, garlic powder, onion powder, dry mustard, ground coriander, cayenne, 1/2 teaspoon black pepper, and 1/2 teaspoon kosher salt. Stir to combine and taste carefully; adjust cayenne if you want more heat.
Coat tuna with spice
Toss the oiled tuna cubes with 2–3 tablespoons of the blackening spice mixture until evenly coated. Reserve remaining spice for additional dusting as desired.
Coating & Frying
Prepare coating batter
In a shallow bowl whisk together 1/2 cup all-purpose flour and 1/4 cup cornstarch. In a separate bowl beat the egg with 2 tablespoons cold water to make an egg wash. Place the dry mix on one plate and egg wash in another; leave the seasoned tuna nearby.
Bread the tuna bites
Working in batches of 8–10 pieces, dredge each spice-coated tuna cube lightly in the flour-cornstarch mixture, then dip into the egg wash, and give a final light toss in the flour mix for a thin, even coating. Shake off excess.
Shallow-fry the tuna
Heat a large skillet over medium-high heat and add 3/4 cup neutral oil. The oil should reach about 325–350°F (medium-high) — you should see gentle shimmering but not heavy smoking. Fry the breaded tuna bites in a single layer, not overcrowding the pan, about 30–45 seconds per side until the exterior is golden and crisp but the center remains rare to medium-rare (adjust time for desired doneness). Use a slotted spoon or tongs to transfer cooked bites to a wire rack or paper towel-lined plate to drain. Repeat with remaining tuna, topping up oil if needed.
Finish with spice
While hot, lightly dust the fried tuna bites with any reserved blackening spice for extra aroma.
Sweet Thai Chili Sauce
Make sauce
In a small bowl combine 1/2 cup sweet Thai chili sauce, 1 teaspoon rice vinegar, 1/2 teaspoon soy sauce, 1/2 teaspoon fresh lime juice, and 1/4 teaspoon sesame oil. Whisk until smooth and taste; adjust acidity or salt to preference. Transfer to a serving ramekin.
Garnish sauce
Stir in half of the thinly sliced scallions to the sauce and reserve the rest for sprinkling on the plated bites. Optionally sprinkle a pinch of toasted sesame seeds into the sauce.
Plating & Serving
Assemble
Arrange microgreens or baby greens on a serving platter or small plates to provide a bed and contrast. Place the warm blackened tuna bites atop the greens in small clusters (about 6 bites per person). Put the ramekin of sweet Thai chili sauce on the platter for dipping.
Garnish and serve
Scatter remaining sliced scallions and toasted sesame seeds over the tuna bites. Add lime wedges to the platter for an optional bright squeeze. Serve immediately while bites are warm and crisp.
