Prepare ingredients

Pat the lump crab meat dry with paper towels to remove excess moisture; pick through and remove any shells. Finely grate the smoked gouda and soften the cream cheese to room temperature so it mixes easily.

In a large mixing bowl, combine the softened cream cheese, mayonnaise, Dijon mustard, Worcestershire sauce, and lemon juice. Whisk until smooth and uniform.

Fold in the grated smoked gouda, minced shallot, chives, parsley, Old Bay seasoning, kosher salt, and black pepper. Mix gently so the cheese and aromatics are evenly distributed.

Add the lump crab meat to the cheese mixture and fold carefully to keep lumps intact. If you want firmer balls that hold shape better, sprinkle in 1/2 cup panko breadcrumbs and the beaten egg; fold until combined but do not overmix.

Taste the mixture and adjust seasoning with a pinch more salt, pepper, or lemon juice if needed. Chill the mixture in the refrigerator for 20–30 minutes to firm up; this makes shaping easier.

Forming & Breading

Set up a breading station: shallow bowl with the 1/4 cup flour, a second bowl with the beaten egg (if not already in mixture), and a third with 3/4 cup panko breadcrumbs seasoned with a pinch of salt and pepper.

Using a medium cookie scoop or a tablespoon, portion the chilled crab mixture into 1.5–2 ounce (about golf-ball-sized) portions. Gently roll each portion between your palms to form compact balls. If mixture is sticky, lightly dust hands with flour.

Lightly dredge each crab ball in flour, dip into beaten egg (if not incorporated into mixture), then roll in panko breadcrumbs to coat evenly. Place finished balls on a parchment-lined tray and refrigerate for 10 minutes to set the crust.

Cook (Pan-Fry)

Heat a large skillet over medium heat. Add 2 tablespoons unsalted butter and 1 tablespoon olive oil; swirl to coat and bring to medium-hot but not smoking.

Working in a single layer without crowding, place crab balls in the skillet and cook for 2.5–3 minutes per side, turning gently with a spatula or tongs to brown all sides evenly. The goal is a golden, crisp exterior and warmed interior; total cook time should be about 8–10 minutes depending on size.

If an internal thermometer is used, target 145°F (63°C) for hot, fully warmed centers. Transfer cooked crab balls to a wire rack or paper-towel-lined plate to drain briefly.

Bake Option (Alternate)

For a hands-off option, preheat oven to 400°F (205°C). Place breaded crab balls on a parchment-lined baking sheet, spray or brush lightly with oil, and bake 12–15 minutes until golden and heated through, turning once halfway.

Finishing & Serve

Warm the naan in a 350°F (175°C) oven for 5–7 minutes or wrap in foil and heat until pliable. Slice into triangles for serving.

Arrange smoked gouda crab balls on a platter over a bed of microgreens or parsley, garnish with extra chives and pickled jalapeños if using. Serve immediately with warm naan wedges and lemon wedges on the side.
