Mini Turkey & Veggie Sliders

Make the patty mix
In a large bowl combine ground turkey, grated carrot, squeezed diced zucchini, diced onion, panko breadcrumbs, egg, 2 tablespoons ketchup, Worcestershire sauce, garlic powder, 1/2 teaspoon salt and 1/4 teaspoon pepper. Use clean hands or a flexible spatula to mix gently until just combined — overmixing makes patties dense.

Shape patties
Divide mixture into 8 equal portions (about 2 ounces / 55 g each). Shape each into a small round patty slightly larger than the mini bun, pressing an indentation in the center so they cook evenly.

Cook patties
Heat 1 tablespoon olive oil in a large nonstick or cast-iron skillet over medium heat. When shimmering, add patties in a single layer without crowding (cook in batches if needed). Cook 3–4 minutes per side, flipping once, until internal temperature reaches 165°F (74°C) and patties are golden-brown. If using cheese, place half-slices on patties in the last minute and cover skillet to melt.

Toast buns and assemble
Slice and lightly toast the mini buns in a clean skillet or toaster for 1–2 minutes until slightly golden. Spread a thin layer of ketchup-mayo on bottom bun, add a lettuce leaf, top with warm turkey patty (with cheese if used), then a dab more sauce and close with top bun. Repeat to make 8 sliders.

Combine 1 cup Greek yogurt, 1/2 cup finely diced, drained cucumber, 1 teaspoon chopped fresh dill, 1 teaspoon lemon juice, 1/2 teaspoon honey, 1/4 teaspoon salt and 1/8 teaspoon pepper in a small bowl. Stir until smooth. Taste and adjust seasoning. Chill for at least 10 minutes to let flavors meld. Serve chilled alongside sliders and fries.
Rainbow Fruit Skewers

Thread fruit onto small skewers in a colorful order (example: strawberry, pineapple, grape, mango, blueberry). Make 6–8 skewers depending on fruit size. If desired, squeeze a little lime over finished skewers for brightness. Keep refrigerated until serving.

Prepare oven and fries
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Toss 2 cups cut sweet potato sticks with 1 tablespoon olive oil, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt and 1/4 teaspoon pepper until evenly coated.

Arrange fries in a single layer on the baking sheet without overcrowding (use two sheets if needed). Bake for 12–15 minutes, flip once halfway through, until edges are crisp and centers are tender. For extra crispness, broil 1–2 minutes while watching closely.
