Method
Cook Oats
Bring 3 cups of water and a pinch of salt to a rolling boil in a medium saucepan over high heat.
Stir in 1 cup organic steel-cut oats, reduce heat to low so the pot simmers gently, and cook uncovered, stirring occasionally to prevent sticking, for 18–22 minutes until oats are tender but still have chew. If mixture thickens too much before oats are cooked, add small splashes (1–2 tablespoons) of water as needed.
Finish & Mix-ins
Fold in 1 tablespoon dehydrated cranberries, 2 tablespoons raisins, and 2 teaspoons brown sugar while oats are still hot so the dried fruit plumps and the sugar dissolves. Taste and adjust sweetness, adding maple syrup or honey if desired.
Stir in 3 tablespoons crushed walnuts, reserving 1 tablespoon for garnish.
Serve
Serve warm.
