Make the muesli mix
Combine dry ingredients
In a large mixing bowl, add 2 cups rolled oats, 1/2 cup chopped pecans, 1/2 cup sliced almonds, 1/4 cup shredded coconut, 1/4 cup raisins, 1/4 cup dried cranberries, and 1/4 cup chopped dried apricots.
Add optional mix-ins: stir in 2 tablespoons toasted wheat germ or oat bran if using, 1/2 teaspoon ground cinnamon and 1/8 teaspoon sea salt. Mix thoroughly so ingredients are evenly distributed.
Taste a small pinch. Adjust dried fruit or nuts to preference (for more sweetness add more raisins or cranberries). If you prefer a crunchier, slightly toasted flavor, you can toast the combined dry mix in a 325°F (160°C) oven for 8–10 minutes, stirring once, then cool completely before storing.
Transfer the prepared muesli to an airtight container. It will keep at room temperature for up to 2 weeks, or in the refrigerator for up to 1 month.
Serve
Scoop 3/4 to 1 cup of the prepared muesli into a bowl (adjust portion to appetite).
If desired, drizzle 1 tablespoon honey or maple syrup over the bowl, and top with 1/2 cup fresh fruit such as sliced banana or berries.
Let sit 3–5 minutes if you like the oats softened slightly, or enjoy immediately for a chewier texture.
Store any leftover prepared bowl in the refrigerator and consume within 24 hours. Dry muesli mix remains separate and dry until combined with milk or yogurt.
