Prepare Fruit

Wash and dry

Rinse all fruit under cold running water. Pat dry with a clean kitchen towel or paper towels to remove excess moisture so the dressing will cling to the fruit.

Hull and cut strawberries

Remove the green tops from the strawberries and quarter them (halves for very small berries). Place into a large mixing bowl.

Dice larger fruit

Peel and dice the pineapple and mango into roughly 1/2-inch (1–1.5 cm) pieces. Core and dice the green apple into similar-size pieces; toss apple immediately with 1/2 tablespoon of lime juice to prevent browning and add to the bowl.

Add grapes and blueberries

Add the blueberries and halved grapes to the bowl with the other fruit. Gently toss to combine, taking care not to crush softer berries.

Make Dressing & Finish

Whisk dressing

In a small bowl or measuring cup, whisk together the remaining 1 1/2 tablespoons lime juice, maple syrup, and lime zest until combined.

Toss with fruit

Pour the dressing over the mixed fruit. Using a large spoon, gently toss the fruit until evenly coated. Let rest 5–10 minutes so flavors meld and juices mingle.

Add mint and season

Just before serving, sprinkle the thinly sliced fresh mint over the fruit, add a pinch of flaky sea salt and a light pinch of black pepper to brighten flavors, then gently toss once to distribute.

Portion and serve

Divide the fruit cup among 4 serving bowls or cups. If desired, garnish each cup with an extra mint leaf and a light sprinkle of lime zest. Serve immediately, or chill up to 2 hours for a colder fruit cup.
