Crisp Golden Potatoes
Preheat oven to 220°C (430°F). On a rimmed baking sheet, toss the halved/diced potatoes with 2 tbs olive oil, smoked paprika, garlic powder, kosher salt, and black pepper until evenly coated.
Spread potatoes cut-side down (if halved) in a single layer. Roast for 25–30 minutes, stirring or flipping once halfway, until golden brown and crisp on edges. Total time will be 25–30 minutes depending on size.

Cook the eggs: Wipe out the bacon skillet if necessary and add 1 tsp oil over medium-low heat. Pour the egg mixture into the skillet. Let sit undisturbed 20–30 seconds until edges set, then using a spatula, gently push set edges toward the center, tilting pan to allow runny egg to flow. Continue until eggs are mostly set but still slightly moist, about 2–3 minutes total for soft-scrambled style. For firmer eggs, cook an additional 1–2 minutes.
Finish sandwich: Top the melted cheddar with 3 bacon strips per sandwich (tear if needed), 2–3 slices of tomato, and torn basil leaves. Add bagel tops. If desired, add a few drops of hot sauce to the tops before serving.
