Cook the protein

Select your breakfast protein. For bacon: cook 2 strips in a medium skillet over medium heat 6–8 minutes, turning occasionally, until crisp; transfer to paper towel. For sausage patties: cook 2 patties over medium heat 4–6 minutes per side until internal temperature reaches 160°F (71°C). For turkey sausage: cook 3–4 minutes per side until done. For sliced ham: warm 1–2 minutes per side until heated through. Wipe skillet if there is excessive fat, leaving a thin coating for eggs.

Cook the eggs

Heat the same skillet over medium-low and add 1 tbs unsalted butter. When butter foams, crack 2 large eggs into the skillet. For sunny-side-up: reduce heat to low, cover, and cook 2–3 minutes until whites are set but yolks still runny. For over-easy: cook 2 minutes, gently flip with a spatula, cook 20–30 seconds. For over-medium: flip and cook 45–60 seconds. For scrambled: beat eggs with 0.25 tsp salt and 0.125 tsp black pepper, pour into skillet, stir continuously until softly set, about 1–2 minutes. Season to taste and remove from heat.

Toast

While cooking potatoes or eggs, toast 1 slice of bread in a toaster or in a skillet over medium heat for 1–2 minutes per side until golden. Spread 0.5 tbs softened butter on the hot toast and set aside. If requested, cut toast diagonally and serve immediately.

Prep potatoes

If not already diced, peel (optional) and cut potatoes into 1/2-inch cubes. Rinse briefly and pat dry with paper towels to remove excess surface starch—this helps them crisp.

Par-cook (optional for faster crisping)

Optional: microwave diced potatoes in a microwave-safe bowl with 1–2 tablespoons water, covered, for 2–3 minutes until slightly softened. Drain and pat dry.

Pan-fry potatoes

Heat a large nonstick or cast-iron skillet over medium-high heat. Add 1 tbs neutral oil and 0.5 tbs olive oil. When shimmering, add diced potatoes in a single layer (cook in batches if needed). Let cook undisturbed 4–5 minutes to develop a golden crust. Stir or flip pieces and continue cooking 6–8 minutes, stirring occasionally, until most pieces are golden and tender.

Finish potatoes

Reduce heat to medium. Add 0.25 cup finely diced onion and cook 2–3 minutes until softened. Stir in 0.25 tsp garlic powder, 0.25 tsp smoked paprika, 0.5 tsp salt, and 0.25 tsp black pepper. Cook 1–2 more minutes to let spices bloom. Taste and adjust seasoning. Stir in 1 tsp chopped fresh parsley if using, then remove from heat and keep warm.
