Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if available. Arrange 8 bacon slices in a single layer without overlapping. Sprinkle 1/4 tsp black pepper evenly over the slices. Bake for 12–18 minutes depending on thickness and desired crispness: start checking at 12 minutes. For chewier bacon remove at ~12–14 minutes; for crispy bacon 16–18 minutes. Transfer bacon to a plate lined with paper towels to drain excess fat before serving.

Skillet method

If using a skillet, heat a large skillet over medium heat and add 1 tbs vegetable oil only if pan is very lean. Add bacon slices in a single layer and cook 4–6 minutes per side, turning occasionally, until browned and crisp to desired doneness. Drain on paper towels.

Virginia Ham Steak

Pat the 2 ham steaks dry with paper towels and season lightly with 1/4 tsp black pepper. Heat a large skillet over medium heat and add 1 tbs unsalted butter. When butter is melted and foamy, add ham steaks. Cook 3–4 minutes per side until edges are caramelized and internal temperature reaches 140°F (60°C). If you prefer a sweet glazed finish, during the last minute sprinkle 1 tsp brown sugar over each steak and spoon melting butter and glaze over the top to form a light crust. Remove from skillet and rest 2 minutes before serving.

Pork Sausage

Baking (hands-off, consistent)

Preheat oven to 400°F (200°C). Place 8 pork sausage links on a rimmed baking sheet lined with foil. Add 2 tbsp water to the sheet (not over sausages) to create steam and keep sausages moist. Bake 18–22 minutes, turning once halfway through, until sausages are evenly browned and reach an internal temperature of 160°F (71°C).

Pan-frying

For stovetop cooking, heat a skillet over medium heat and add 1 tbs olive oil. Add sausages and cook 12–15 minutes, turning frequently so all sides brown evenly. Reduce heat if sausages brown too quickly; cook until internal temp is 160°F (71°C).

Chicken Apple Sausage

Pan-sear with optional apple glaze

Heat a skillet over medium heat. Add chicken apple sausages in a single layer and cook 4–5 minutes per side until golden brown and heated through (internal temp 165°F / 74°C). If using glaze, combine 2 tbs apple cider and 1 tsp brown sugar in a small bowl. During the last 1–2 minutes of cooking, pour glaze over sausages and spoon to coat, letting it reduce and become glossy. Remove from heat and rest 1–2 minutes before serving.

Preheat oven to 400°F (200°C). Place 8 chicken apple sausages on a baking sheet and bake 15–18 minutes, turning once, until internal temp is 165°F (74°C).
