Make the Dough

In a large mixing bowl, combine the flour and salt. Create a well in the center and crack the eggs into the well. Add the olive oil. Using a fork, beat the eggs gently, then gradually incorporate the flour starting from the inner rim of the well until the dough begins to form.

Knead the Dough

Transfer the dough onto a lightly floured surface. Knead the dough for about 8-10 minutes until it is smooth and elastic. Wrap it in plastic wrap and let it rest for at least 30 minutes at room temperature.

Roll Out the Dough

After resting, divide the dough into four portions. Roll out one portion at a time using a pasta machine or a rolling pin, until it reaches your desired thickness.

Cut the Pasta

Cut the rolled-out dough into your desired shape, such as fettuccine, tagliatelle, or lasagna sheets. Dust the cut pasta with flour to prevent sticking.

Cook the Pasta

Bring a large pot of salted water to a boil. Add the fresh pasta and cook for 2-4 minutes until they float and are al dente. Drain and serve with your favorite sauce.
