Method

Dumpling Wrapper Preparation

1

Mix the Flours

In a mixing bowl, combine the tapioca flour, wheat starch, and salt. Stir until well combined.

2

Add Water

Gradually add the hot water while stirring continuously. Then add the cold water and knead until a smooth dough forms.

3

Rest the Dough

Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Shrimp Filling Preparation

4

Chop the Shrimp

Finely chop the fresh shrimp and place them in a mixing bowl.

5

Add Seasoning

Add minced garlic, ginger, sesame oil, soy sauce, cornstarch, salt, and white pepper to the chopped shrimp. Mix well until all ingredients are combined.

6

Chill the Filling

Cover the shrimp filling and refrigerate for at least 15 minutes to allow the flavors to meld.

Assembling and Cooking

7

Roll the Dough

Divide the rested dough into small pieces. Roll each piece into a thin circle, about 3 inches in diameter.

8

Fill the Dumplings

Place a teaspoon of the shrimp filling in the center of each dough circle. Fold the dough over the filling, forming a half-moon shape. Pinch the edges to seal.

9

Steam the Dumplings

Place the dumplings in a steamer lined with parchment paper. Steam for about 6-8 minutes until they are translucent and cooked through.

10

Garnish and Serve

Remove the dumplings from the steamer, garnish with chopped green onions, and serve hot with soy sauce or chili sauce for dipping.
