Melt the Chocolate

In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

Whip the Cream

In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

Beat the Egg Whites

In another bowl, whisk the egg whites until they start to froth. Gradually add the sugar and continue whisking until stiff peaks form.

Combine the Mixtures

Fold the melted chocolate into the whipped cream until combined. Then gently fold in the beaten egg whites, being careful not to deflate the mixture.

Chill the Mousse

Spoon the mousse into serving glasses and refrigerate for at least 2 hours until set.

Prepare Hazelnuts and Kumquats

While the mousse sets, toast the hazelnuts in a dry pan until golden. Slice the kumquats thinly.

Once the mousse is set, top with toasted hazelnuts, kumquat slices, and a scoop of hazelnut ice cream. Enjoy!
