Ric's Chimichanga Recipe
Ric stuffs this chimichanga with his famous Green Pork Chili and tops it with scoops of sour cream and guacamole. Served with Mexican rice and refried beans.

Prepare the Filling
In a medium saucepan, heat the Green Pork Chili over medium heat until warmed through.
Assemble the Chimichangas
Lay a flour tortilla flat and spoon 1/2 cup of the warmed Green Pork Chili in the center. Fold the sides over the filling and then roll it up tightly from the bottom.
Fry the Chimichangas
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully place the rolled chimichangas seam side down in the oil. Fry for about 3-4 minutes on each side until golden brown and crispy.
Serve
Remove the chimichangas from the oil and drain on paper towels. Top with sour cream and guacamole before serving. Serve alongside Mexican rice and refried beans.
