Prepare rice

If you haven't already, break up any clumps in the chilled day‑old rice with your hands or a fork so the grains are separated. Keep chilled until ready to use.

Beat eggs

In a small bowl, beat the 2 large eggs with 1/4 tsp salt and the sesame oil until combined.

Garlic & Aromatics

Fry garlic until golden

Heat a large wok or heavy skillet over medium heat. Add 3 tablespoons neutral oil. When shimmering, add the minced garlic and stir constantly for about 1–2 minutes until light golden and fragrant. Be careful not to burn it. Use a slotted spoon to transfer the crispy garlic to a small bowl, leaving the oil in the pan.

Cook eggs

Return the pan to medium-high heat and add the remaining 1 tablespoon oil and the butter. Swirl to coat. Pour in the beaten eggs and let sit for 10–15 seconds until the edges set, then gently scramble until just cooked but still slightly soft. Transfer eggs to a plate and set aside.

Stir-fry rice

Increase heat to high. Add the chilled, loosened rice to the pan; break up any remaining clumps with the back of a spatula. Spread rice in an even layer and let it cook undisturbed for 30 seconds to develop some chew. Stir and toss to heat through, adding a splash (about 1 tbs) of oil if the rice seems dry.

Season and combine

Drizzle the light soy sauce over the rice and immediately toss to coat evenly. Add the cooked eggs back to the wok and fold them gently into the rice. Stir in the sliced chives, half of the reserved crispy garlic, and continue tossing for another 30–60 seconds until everything is evenly combined and hot.

Seasoning & Garnish

Taste and season the fried rice with the fine sea salt and white pepper, adjusting to preference. If desired, add the optional toasted sesame seeds and toss briefly.

Transfer the garlic fried rice to a serving plate or bowl. Sprinkle the remaining crispy garlic on top along with sliced green onions and an extra pinch of chives for color. Serve immediately.
