Pretzel Dough Preparation
Mix the Dough
In a large mixing bowl, combine the warm water, sugar, and instant yeast. Let it sit for about 5 minutes until it becomes frothy. Then, add the flour and salt to the mixture and knead until a smooth dough forms.
Let the Dough Rise
Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.
Shape the Pretzels
Preheat your oven to 450°F (232°C). After the dough has risen, divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel. Place the shaped pretzels on a baking sheet lined with parchment paper.
Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully add each pretzel to the boiling water for about 30 seconds, then remove them with a slotted spoon and return to the baking sheet.
Add Coarse Salt
Sprinkle coarse sea salt on top of each pretzel before baking.
Bake the Pretzels
Bake in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly before serving.

Prepare the Cheese Dip
In a medium saucepan over low heat, combine the cream cheese and milk. Stir until melted and smooth.
Add Cheeses and Spices
Once the cream cheese is melted, gradually stir in the shredded cheddar cheese, diced jalapeños, garlic powder, onion powder, and salt. Continue stirring until everything is well combined and the cheese is fully melted.
Serve Warm
Remove from heat and transfer to a serving bowl. Keep warm until ready to serve with the pretzels.
