Chill and prepare plating

Begin by placing a shallow serving platter in the refrigerator for 15 minutes. Fill a wide, rimmed serving tray with an even bed of crushed ice (about 6 cups) to keep oysters cold and stable. Arrange seaweed or microgreens lightly on the ice to create pockets for oysters and visual appeal. Cut lemons into 12 wedges and chill until service.

Shuck oysters

Using a clean oyster knife and protective glove or towel, hold the oyster flat side up and work the knife into the hinge. Twist gently until it pops, slide the blade along the top shell to sever the muscle, lift off the top shell, and run the blade beneath the oyster to release it from the bottom shell while preserving as much liquor as possible. Inspect each oyster for shell fragments and drop each oyster (in its bottom shell) into a prepared pocket on the ice. Work methodically so oysters remain cold; finish shucking all 12 (allow ~12–18 minutes).

Classic Mignonette

Combine 2 tablespoons minced shallot, 3 tablespoons red wine vinegar, 1 tablespoon champagne vinegar, 1 teaspoon coarse sea salt, and 1 teaspoon freshly ground black pepper in a small bowl. Stir and let rest at room temperature for 10–15 minutes to soften the shallot and marry flavors. Taste and adjust acidity or salt as preferred. Transfer to a small serving ramekin.

Citrus-Herb Butter (Warm Accent)

In a small saucepan over low heat, melt 4 tablespoons unsalted butter gently until foamy but not browned (about 1–2 minutes). Remove from heat and stir in 1 tablespoon fresh lemon zest, 2 tablespoons finely chopped parsley, 1 tablespoon finely chopped chives, and 1/2 teaspoon fine sea salt. Keep warm (set saucepan in a warm water bath or off heat) for service. This can be spooned sparingly over oysters for a warm, aromatic finish.

Spicy Cocktail (Optional)

Whisk together 1/2 cup ketchup, 2 tablespoons prepared horseradish (more to taste), 1 teaspoon hot sauce, 1 tablespoon fresh lime juice, and 1/2 teaspoon Worcestershire sauce until smooth. Chill briefly. Adjust heat and horseradish level to preference. Serve in a small ramekin alongside the mignonette.

If making the crisp shallots, heat 1/2 cup neutral oil in a small saucepan to 350°F (175°C). Spread thinly sliced shallot in a single layer and fry in batches until golden brown and crisp, about 1–2 minutes per batch. Remove with a slotted spoon to paper towels and immediately season with 1/4 teaspoon fine sea salt. Allow to cool completely; they will keep their crispness and can be sprinkled sparingly over oysters or served in a small dish.

Service & Finishing

For each oyster on the ice bed, offer a small spoon of mignonette and a lemon wedge at the side. For guests who want a warm accent, spoon a few drops of the citrus-herb butter directly onto the oyster (it will slightly poach the top and add richness). Offer the spicy cocktail and crisp shallot garnish as optional accompaniments. Present the platter with small forks and napkins. Discard any oysters that do not smell briny and fresh; good oysters should smell like clean sea air.

Clean-up and leftovers: keep any unused oysters refrigerated and consume within 24 hours. Refrigerate sauces separately for up to 3 days (citrus-herb butter may solidify and can be gently warmed before use).
