Prep crab
If using lump crab, pick through for shells and finely chop to measure 1 cup. If using imitation crab, finely chop into small pieces and measure 1 cup.
Soften cream cheese
Leave the 8 oz cream cheese at room temperature for 20–30 minutes or microwave in 5–8 second bursts until pliable but not melted.
In a medium mixing bowl, combine the softened cream cheese and chopped crab. Stir with a spatula until smooth and evenly mixed.
Add the sliced green onions, 1 tsp soy sauce, 1 tsp Worcestershire sauce, 1 tsp sugar, 1 tsp garlic powder, 1 tsp ground white pepper, 1 tsp sesame oil, and optional 1 tsp dry sherry. Mix thoroughly until ingredients are evenly distributed and the mixture is spreadable. Taste and adjust seasoning (more soy for salt, pepper to taste).
Cover the bowl and refrigerate for 15–30 minutes to firm up the filling slightly — this makes wrapping easier.
Wrappers & Sealing
Set out a clean work surface and a small bowl with the beaten egg (or a bowl of water) to act as adhesive. If desired, lightly dust the surface with 1 tsp cornstarch to keep wrappers from sticking.
Place a wonton wrapper on the work surface with one corner pointing toward you (diamond shape). Spoon about 1 teaspoon of the chilled crab filling into the center of the wrapper. Do not overfill — about 1 tsp yields a good seal and crisp pocket.
Dip your finger into the beaten egg (or water) and moisten the top two edges of the wrapper. Fold the bottom corner up over the filling to meet the top corner, forming a triangle, and press out any air. Press firmly to seal the edges.
If not cooking immediately, cover lightly with plastic wrap and refrigerate up to 2 hours (longer may soften wrappers).
Frying (or Baking) & Serving
Deep-frying (recommended)
Pour oil into a deep, heavy-bottomed pot or Dutch oven to reach about 2 inches deep (approximately 2 cups). Heat oil over medium-high until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of wrapper — it should sizzle and brown in about 30–40 seconds.
Use a slotted spoon to remove rangoon and drain on a wire rack set over a baking sheet or on paper towels. Allow to cool for 1–2 minutes before serving so the filling sets slightly.
Baking (lighter option)
Preheat oven to 400°F (200°C). Lightly spray or brush both sides of rangoon with cooking spray or oil and place on a parchment-lined baking sheet spaced apart. Bake 8–12 minutes, flipping halfway, until golden and crisp. Baking yields a different texture (less blistered) but still delicious.
Serve hot with sweet chili sauce or duck sauce and optional soy sauce on the side. Garnish with lime wedges and extra sliced green onion if desired.
Leftovers can be refrigerated in an airtight container for up to 2 days; re-crisp in a 375°F (190°C) oven for 5–8 minutes or in a hot skillet.
