Cook bacon

Place a skillet or griddle over medium heat. Lay the 2 slices of thick-cut bacon in the cold skillet, then turn heat to medium. Cook 6–8 minutes, flipping occasionally, until crisp-tender. Transfer to a paper towel-lined plate to drain. Reserve 1 teaspoon of bacon fat in the pan; discard the rest or save for another use.

Caramelize Walla Walla onion (quick)

Thinly slice enough Walla Walla sweet onion to yield 2 tablespoons. In the same skillet with the reserved bacon fat over medium-low, add the sliced onion and a pinch of salt. Cook, stirring occasionally, 5–7 minutes until softened and slightly golden. Remove to a small bowl and set aside.

Toast bread

Butter one side of each bread slice with the softened butter (about 1 tablespoon total). Heat a clean skillet or griddle over medium heat. Place bread butter-side-down and toast until golden, 1–2 minutes. Flip and lightly toast the other side 30–45 seconds. Remove and keep warm.

Prepare eggs

Crack the 2 eggs into a bowl, season with 1/4 teaspoon salt and 1/8 teaspoon black pepper, and whisk lightly. In a nonstick skillet over medium-low, add a little butter or the reserved bacon fat and pour eggs in. For folded/soft-scrambled style (recommended for sandwich): gently stir with a spatula until set but still moist, about 2–3 minutes. For fried eggs, cook to desired doneness (sunny-side or over-easy). Remove from heat.

Assemble Sandwich

Spread 1 teaspoon whole grain mustard on the inside of one toasted bread slice. On the other slice, spread 1 tablespoon apple butter, spreading to the edges.

Place the sliced or shaved Beecher's Flagship cheese (2 oz) on the mustard-spread slice while bread is still warm so the cheese begins to soften.

Layer the 2 slices of smoked/sliced ham on top of the cheese, then add the cooked bacon strips (break in half if needed to fit).

Add the cooked eggs on top of the bacon. Spoon the caramelized Walla Walla onion evenly over the eggs.

Top with 3 thin pickle slices. If using, add microgreens or baby arugula and a few drops of hot sauce to taste.

Close the sandwich with the apple-buttered slice, press gently, and return to the warm skillet for 30–60 seconds on each side over low heat to meld flavors and further soften the cheese (optional).

Slice the sandwich in half and serve immediately.
