Using a 2 1/2-inch round biscuit cutter (or a floured glass), plunge straight down without twisting to preserve rise. Gather scraps, gently press together (no more than once), and cut remaining biscuits. You should get about 8–10 biscuits depending on cutter size.

Place biscuits on the prepared baking sheet so sides touch slightly for taller biscuits or spaced apart for crisp edges. Brush tops lightly with 2 tablespoons cold milk for color and sheen.
