Gelato Preparation

Heat Milk and Cream

In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until it begins to steam, but do not let it boil.

Whisk Egg Yolks and Sugar

In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is light and creamy.

Combine Mixtures

Gradually pour the hot milk and cream mixture into the egg yolk mixture, whisking continuously to temper the eggs. Once combined, return the mixture to the saucepan.

Thicken the Mixture

Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 8-10 minutes. Remove from heat and stir in vanilla extract.

Cool the Mixture

Transfer the mixture to a clean bowl, cover with plastic wrap, and refrigerate until completely chilled, at least 4 hours or overnight.

Churn the Gelato

Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency. Transfer to an airtight container and freeze until firm.

Biscotti Preparation

Preheat the Oven

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.

Combine Wet Ingredients

In another bowl, beat the eggs, then mix in the almond extract, orange zest, and lemon zest.

Combine Mixtures

Add the wet mixture to the dry ingredients and mix until just combined. Fold in the sliced almonds.

Shape the Dough

Divide the dough in half and shape each half into a log about 12 inches long on the prepared baking sheet.

Bake the Logs

Bake in the preheated oven for 25-30 minutes, until golden and firm to the touch. Remove from the oven and let cool for 10 minutes.

Slice the Biscotti

Once cooled, slice the logs diagonally into 1-inch thick pieces. Place the slices back on the baking sheet.

Second Bake

Return the biscotti to the oven and bake for an additional 10-15 minutes until crisp and golden. Allow to cool completely.

Brew Espresso

Brew 2 shots of espresso using your preferred method (espresso machine, stovetop, etc.).

Assembly

Serve Gelato Affogato

In a serving glass or bowl, scoop a generous portion of vanilla gelato. Pour the hot espresso over the gelato. Serve immediately with almond citrus biscotti on the side.
