In a large mash tun, add the 10 cups of Pale Malt, 1 cup of Caramel Malt, and 0.5 cups of Crystal Malt. Heat 5 gallons of water to 165°F (74°C) and add it to the grains. Stir to combine and let it rest for 60 minutes at a temperature of around 150°F (65°C).

After the mash is complete, sparge the grains with hot water (170°F or 77°C) to collect the wort. Aim to collect about 6 gallons of wort.

Bring the wort to a rolling boil over high heat.

Bring to a Boil

Once boiling, add 1 oz of Chinook hops to the wort. Boil for 30 minutes.

After 30 minutes, add 1 oz of Cascade hops and 1 oz of Centennial hops. Continue boiling for another 15 minutes.

In the last 5 minutes of the boil, add 1 oz of Simcoe hops. This will enhance the aroma.

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Transfer the cooled wort to a sanitized fermentation vessel and pitch the American Ale yeast. Seal the vessel with an airlock.

Allow the beer to ferment at a stable temperature (around 68-70°F or 20-21°C) for 1-2 weeks.

Once fermentation is complete, prepare for bottling by sanitizing bottles and caps.

Transfer the beer into the bottles, leaving about an inch of headspace. Cap each bottle securely.

Bottle the Beer

Allow the bottles to carbonate at room temperature for 1-2 weeks before refrigerating.
