Our Pumpkinhead ale is a clean, crisp American wheat ale, flavored with a unique blend of pumpkin spices.

In a large brew kettle, heat 5 gallons of water to approximately 165°F (74°C). Add 5 cups of American wheat malt and 2 cups of pale malt, stirring to combine. Maintain the temperature at around 150°F (65°C) for 60 minutes to allow the starches to convert into sugars.

Prepare the Mash

After the mash is complete, sparge the grains with hot water until you have collected about 6-7 gallons of wort in the brew kettle.

Lautering

Bring the collected wort to a boil. Once boiling, add 1 oz of hops and boil for 60 minutes. Make sure to stir occasionally to prevent scorching.

Boiling

Five minutes before the end of the boil, add the pumpkin puree, cinnamon, nutmeg, ginger, cloves, and vanilla extract to the kettle. Stir well to combine and allow the flavors to meld during the final boiling stage.

Incorporate Pumpkin and Spices

After the boil, cool the wort rapidly using a wort chiller or an ice bath until it reaches about 70°F (21°C). Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal with an airlock.

Cooling and Pitching Yeast

Allow the beer to ferment at room temperature for about 1-2 weeks or until fermentation activity has ceased.

Primary Fermentation

Once fermentation is complete, prepare a priming solution by boiling 3/4 cup of sugar in 2 cups of water. Cool the solution and add it to the fermented beer before bottling.

Prepare for Bottling

Siphon the beer into clean, sanitized bottles, leaving about an inch of headspace. Cap the bottles and store them in a dark place at room temperature for carbonation.

Bottling

After about 2 weeks of carbonation, chill the bottles in the refrigerator. Serve cold and enjoy your homemade Pumpkinhead Ale!
