Our version of this classic style blends rich malts for a hearty, smooth flavor with notes of caramel.

In a large brew kettle, heat 5 liters of filtered water to approximately 160°F (71°C). Add the Munich, Caramel, and Pilsner malts to the water and stir. Maintain the temperature for 60 minutes.

Mashing the Grains

After the mashing period, sparge the grains with hot water to collect the wort. This should yield about 4 liters of liquid.

Sparging

Bring the collected wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes. Add the Saaz hops in the last 15 minutes of the boil.

Boiling the Wort

After boiling, quickly cool the wort to around 70°F (21°C) using a wort chiller or an ice bath.

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel and pitch the German lager yeast. Seal the vessel with an airlock and let it ferment at around 50°F (10°C) for 2-3 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the beer. Bottle the beer in sanitized bottles and cap them.

Bottling

Let the bottles carbonate at room temperature for about 2 weeks. Then refrigerate before serving.
