In a large mash tun, combine the malted barley and corn with hot water (around 65°C). Stir thoroughly and maintain this temperature for 60 minutes to convert the starches into sugars.

Mashing

After mashing, transfer the mixture to a lauter tun to separate the liquid wort from the solid grain. Rinse the grains with additional hot water to extract as much sugar as possible.

Lautering

Bring the wort to a boil and add the hops. Boil for about 60 minutes, allowing the hops to impart their bitterness and aroma to the beer.

Boiling

Once the boiling is complete, cool the wort rapidly to around 20°C. Transfer the cooled wort to a fermentation vessel and add the yeast. Seal the vessel and allow it to ferment for about 7-10 days.

Cooling and Fermentation

After fermentation, transfer the beer to a conditioning tank to mature for another week. This step helps to develop the flavors and carbonation.

Conditioning

Once conditioning is complete, bottle the beer and cap it. If desired, add a pinch of sugar to each bottle to promote carbonation.

Bottling
