Preparation

Marinate the Swordfish

In a shallow dish, combine the teriyaki sauce, olive oil, salt, and black pepper. Add the swordfish steaks, coating them well. Cover and marinate for at least 30 minutes.

Prepare the Rice

Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice, water, and grated ginger. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked. Stir in the chopped green onions and soy sauce.

Make the Panang Coconut Curry Sauce

In a saucepan over medium heat, combine coconut milk, Panang curry paste, brown sugar, fish sauce, and lime juice. Stir well and simmer for 10 minutes.

Grilling

Grill the Swordfish

Preheat the grill to medium-high heat. Remove the swordfish from the marinade and grill for about 4-5 minutes per side or until the fish is cooked through and has nice grill marks.
