Prepare the Sake Plum Sweet & Sour Glaze

In a small saucepan, combine 1 cup of sake, 1/2 cup of plum sauce, and 1/4 cup of rice vinegar. Simmer over medium heat until slightly thickened, about 10 minutes. Set aside.

Cook the Mahi Mahi

Season the Mahi Mahi fillets with salt and pepper. Heat sesame oil in a large skillet over medium-high heat. Add the fillets and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. Remove from heat and keep warm.

Fried Rice Preparation

In the same skillet, add a bit more sesame oil if necessary. Add the carrots and sauté for 2-3 minutes until softened. Push to the side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked.

Combine Ingredients

Add the cooked jasmine rice, green onions, and peas to the skillet. Pour the soy sauce over the rice mixture and stir-fry everything together for 5-7 minutes until heated through and well combined.

Serve

Place a generous serving of fried rice on each plate, top with a Mahi Mahi fillet, and drizzle with the Sake Plum Sweet & Sour Glaze.
