Prepare the Tartar Sauce

In a bowl, mix mayonnaise, chopped dill pickles, lemon juice, and capers (if using) until well combined. Cover and refrigerate until serving.

Prepare the Potatoes

Peel and cut the russet potatoes into thick fries. Rinse them in cold water and pat dry with a paper towel.

Fry the Potatoes

In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the potato slices in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels. Season with salt to taste.

Prepare the Batter

In a mixing bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, black pepper, and cold sparkling water until smooth.

Fry the Haddock

Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place the fillets into the hot oil and fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Serve the crispy fish alongside the house fries and tartar sauce for dipping.
