Make the Chimichurri

In a food processor, combine the parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, salt, black pepper, and lemon juice. Pulse until finely chopped but not pureed. Adjust salt and pepper to taste.

Prepare the Artichokes

If using fresh artichokes, trim and steam them until tender. If using canned, simply drain and rinse.

Grill the Artichokes

Preheat your grill to medium-high heat. If using fresh artichokes, cut them in half and brush with olive oil. Grill for about 5-7 minutes per side until charred and heated through.

Serve

Drizzle the chimichurri sauce over the grilled artichokes and serve immediately.
