Prepare the Wonton Crisps
Preheat the oven to 375°F (190°C). Cut the wonton wrappers into triangles and arrange them on a baking sheet. Brush lightly with sesame oil and bake for about 8-10 minutes, or until golden and crispy. Remove from the oven and set aside.
Make the Soup Base
In a large pot, heat the vegetable broth over medium heat. Add the chopped cucumber (diced) and sliced scallions (reserve some for garnish). Bring to a simmer.
Add Seasoning
Stir in the soy sauce, sesame oil, salt, and pepper. Let it simmer for 5-7 minutes to allow the flavors to meld.
Serve the Soup
Ladle the soup into bowls. Top with the remaining scallions, sesame seeds, and the wonton crisps. Enjoy your refreshing cucumber soup!
