Preparation
Prepare the batter
In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and well combined.
Prepare the seafood
Pat the cod fillets, prawns, and calamari dry with paper towels. This helps the batter adhere better.
Frying
Heat the oil
In a deep saucepan or fryer, heat vegetable oil to 180°C (350°F).
Batter and fry the seafood
Dip each piece of cod, prawn, and calamari into the batter, allowing excess to drip off. Carefully place them into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 4-5 minutes for the cod and prawns, and 2-3 minutes for the calamari.
Drain
Remove the fried seafood from the oil and place on paper towels to drain excess oil.
Serving
Plate the platter
Arrange the fried cod, prawns, and calamari on a serving platter. Serve hot with lemon wedges and tartar sauce on the side.
