For the Beer Battered Alaskan Cod

Method

Instructions

1

Prepare the batter

In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Slowly pour in the beer while whisking until the mixture is smooth and free of lumps. Let it rest for about 15 minutes.

2

Heat the oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it’s ready.

3

Coat the cod

Pat the Alaskan cod fillets dry with paper towels. Dip each fillet into the batter, allowing excess to drip off.

4

Fry the cod

Carefully place the battered cod fillets into the hot oil, frying them in batches to avoid overcrowding. Cook for about 4-5 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain excess oil.

5

Serve

Serve the beer battered Alaskan cod hot with lemon wedges and tartar sauce on the side.
