Daily Spud (baked potato)

    Preheat and prepare potato

    Preheat oven to 425°F (220°C). Scrub the russet potato well and pat dry. Prick the potato all over with a fork (6–8 times) to let steam escape during baking.

    Oil and season

    Rub the potato skin with 1 teaspoon olive oil and sprinkle about 1 teaspoon coarse salt evenly over the skin. Place directly on the oven rack or on a baking sheet for easier handling.

    Bake

    Bake for 45–60 minutes until the skin is crisp and a skewer or knife inserted into the center meets little resistance. Exact time depends on potato size; for a medium potato plan ~50 minutes.

    Finish and dress

    Remove potato from oven and make a lengthwise cut on top. Squeeze the ends to open the potato, fluff the interior with a fork, and place 1 tablespoon salted butter inside. Top with 2 tablespoons sour cream, 2 tablespoons shredded cheddar (if using), and 1 tablespoon chopped chives. Keep warm while you cook the steak.

    Bring steak to room temperature & season

    Take the 10 oz sirloin out of the refrigerator 30–40 minutes before cooking to approach room temperature. Pat dry thoroughly with paper towels. Season both sides generously with about 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper, pressing the seasoning into the meat.

    Preheat pan

    Place a heavy skillet (cast-iron preferred) over high heat. Heat until very hot — about 3–5 minutes. Add 1 tablespoon vegetable oil and swirl to coat; the oil should shimmer and just begin to smoke.

    Sear the steak

    Carefully place the steak in the hot pan and let it sear undisturbed for 2.5–3.5 minutes to develop a deep brown crust. Flip and sear the other side for 2–3 minutes. Timing depends on thickness and desired doneness.

    Baste and finish

    Reduce heat to medium. Add 1 tablespoon unsalted butter, the smashed garlic clove, and the fresh thyme or rosemary sprigs to the pan. Tilt the pan slightly and use a spoon to baste the steak with melted butter for 1–2 minutes while the steak finishes to your preferred doneness (aim for 125°F/52°C for medium-rare, 135°F/57°C for medium).

    Rest

    Remove steak to a cutting board and loosely tent with foil. Rest for 5–7 minutes to allow juices to redistribute. While resting, the internal temperature will rise a few degrees.

    Slice and serve

    Slice the steak against the grain into 1/4–1/2 inch slices. Serve alongside the baked Daily Spud, spooning any resting juices over the steak or the potato. Optional: add an extra pat of butter to the steak or a sprinkle of finishing salt.
