Prepare the Calamari
Begin by rinsing the cleaned calamari under cold water. Pat them dry with paper towels, and season with salt and black pepper.
Heat the Oil
In a large frying pan or deep fryer, heat the oil over medium-high heat until it reaches 180°C (350°F).
Fry the Calamari
Carefully add the seasoned calamari to the hot oil in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
Prepare the Sauce
In a mixing bowl, combine the sweet chili sauce and fresh lime juice. Adjust seasoning with more lime or salt if desired.
Combine and Serve
Toss the fried calamari with the sliced Fresno chili peppers and the prepared sweet chili sauce. Plate the dish and garnish with chopped peanuts and micro cilantro before serving.
