Prepare the Fries

Wash and peel the potatoes. Cut them into fries and soak in cold water for at least 30 minutes. Drain and pat dry.

Fry the Potatoes

Heat 1 cup of vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove from oil and drain on paper towels. Season with salt to taste.

Prepare the Catfish

In a shallow dish, mix flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together eggs and milk.

Batter the Catfish

Dip each catfish fillet into the egg mixture, then coat in the flour mixture, pressing lightly to adhere.

Fry the Catfish

Heat the remaining 1 cup of vegetable oil in a large skillet over medium-high heat. Fry the catfish fillets for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Serve

Serve the fried catfish with house-cut fries and tartar sauce on the side if requested.
