Method
Prepare Oysters & Serving Bed
Chill and prepare bed
Place 3–4 cups crushed ice or a layer of rock salt evenly on a serving platter or on individual plates to form a stable bed for the oysters. This keeps shells level and cold.
Shuck oysters
Using a short, sturdy oyster knife and a thick towel or glove for protection, insert the knife at the hinge, twist gently to pop the shell, slide the blade along the top shell to cut the muscle and remove the top shell. Tilt the oyster so liquid pools into the bottom shell and slide the blade under the oyster to release the muscle from the bottom shell, keeping the oyster level so liquor (natural juice) is retained.
Arrange oysters
Nestle each half shell, cup side down, into the prepared ice bed so they sit level. Reserve any broken shells; discard oysters with a strong off smell or that have little to no liquor.
Make Classic Mignonette
In a small bowl combine 3 teaspoons red wine vinegar, 1 teaspoon champagne vinegar, 1 tablespoon finely minced shallot, 1 teaspoon cracked black pepper and 1 teaspoon sea salt. Stir until salt dissolves slightly. Taste and adjust acidity/salt — the shallot should be bright but not overpowering. Chill for at least 10 minutes to let flavors meld.
Prepare Condiments
Spoon the prepared horseradish and cocktail sauce into small ramekins. Place hot sauce in a small dish or dropper. Label or place near oysters so guests can choose their condiment. Keep condiments chilled until serving.
Serve
To eat: give each oyster a small squeeze of lemon or a light spoonful of mignonette, a touch of horseradish or cocktail sauce, or a drop of hot sauce as desired. Consume directly from the half shell.
