Inspect and Pat Dry
Rinse the shucked oysters gently under cold running water to remove any grit. Place them on a paper towel and pat dry carefully to remove excess moisture. Set aside on a plate.
Marinate
In a small bowl, combine buttermilk, hot sauce, 1 tsp kosher salt and 1 tsp black pepper. Add the oysters and gently stir to coat. Cover and refrigerate for 15–30 minutes. This tenderizes the oysters and helps the coating adhere.
Dry Coating
While oysters marinate, prepare the dry mix. In a shallow bowl or wide plate, whisk together the flour, cornstarch, panko breadcrumbs, Old Bay seasoning, paprika, garlic powder, onion powder, 3/4 tsp kosher salt and 1/2 tsp black pepper until evenly combined. Ensure panko is broken up to avoid large clumps.
Wet Dredge & Binding
In a second shallow bowl, whisk the egg, milk and Dijon mustard until smooth. This will be the wet dredge to bind the dry coating to the oysters.
Frying
Heat the oil in a heavy skillet or Dutch oven to 350°F (175°C). If you don't have a thermometer, heat until a small piece of bread sizzles and browns in about 30–40 seconds.
Set up a breading station: marinated oysters, wet dredge, and dry coating. Working one at a time, remove an oyster from the buttermilk, let excess drip off, dip into the egg mixture, then dredge thoroughly in the dry mix, pressing lightly so panko and flour adhere. Place each coated oyster on a wire rack while you finish breading the rest.
Fry in batches to avoid crowding — 2–3 oysters per batch depending on pan size. Carefully lower oysters into the hot oil and fry until golden brown and crisp, about 2–3 minutes per side (roughly 4–5 minutes total) for medium oysters. Use a slotted spoon or spider to turn as needed and to remove.
Transfer fried oysters to a paper towel–lined tray and immediately sprinkle with a light pinch of salt. Let them rest 1–2 minutes to finish cooking internally and to drain excess oil.
Basket Assembly & Garnish
Prepare serving baskets or plates by placing shredded lettuce or cabbage as a bed. Arrange 7 fried oysters on the bed in a single layer or slight overlap.
If serving as a lunch special, line small baskets with paper liners before adding lettuce to keep presentation clean. Serve immediately while hot and crisp.
